Bun Cha (grilled pork noodle salad)
Ingredients
Method
1. Finely chop spring onions, lemongrass, and shallots. Marinade the sliced pork in the mixture together with seasoning salt, MSG, oyster sauce and sugar.
2. Do the same for the marinade of pork mince.
3. Marinade for 30 minutes
4. Arrange pork slices in one layer onto a grill rack.
5. Ball the mince into little balls, flatten them into 1cm thickness and 2cm diameter circles and arrange them on grill rack.
6. Cook the meat under the grill in the oven or over charcoal grill till cooked, depending on the thickness of the meat, it may take up to 10 to 20 minutes.
7. Serve with salad, herbs and noodle with generous amount of dipping sauce.
- Lemongrass (3 roots)
- Pork shoulder mice (0.5kg)
- Pork, upper leg cut, thinly sliced (1 kg)
- Rice vermicelli noodle (3kg)
- Shallots (3 pieces)
- Spring onions (about 3,000VND worth)
- MSG (1.5 teaspoons)
- Oyster sauce (1 teaspoon)
- Seasoning salt (1.5 teaspoons)
