Sweet corn pudding (yields: 10 bowls)

Method
1. Grate corn into the water, bring it to boil then turn heat down to simmer.
2. Simmer for 30 minutes.
a. Add a pinch of salt.
3. Add sugar in and stir through.
4. Taste and add water and/or sugar to suit your taste, keep in mind that water will reduce after the
simmering process.
5. Mix corn flour in half a bowl of cold water.
6. Gently pour into the pot, stirring thoroughly while pouring in.
7. The mixture will thicken, keep on the boil for 5 minutes.
8. Serve into individual bowls, top with coconut cream.
- Caster sugar (0.5kg)
- Corn (5 cobs)
- Corn flour (3 tablespoons)
